Been on a health kick lately .. eating better, exercising more and trying to drop some lbs. [30lbs by my 30th bday, to be exact] Tonight's dinner .. super delish, BTW .. is a recipe a friend posted a few weeks ago.
*Realized that food presentation is not easy! Especially since I don't have the patience to arrange orange slices when I'm hungry.*
Chicken n Mango Mandarin Salad ..

~Pepper Chicken Breast with mango and mandarin oranges, avocado chunks, sliced cucumbers and goat cheese on a bed of mixed greens. No dressing necessary.
Ginger Ale with Fresh Raspberries n Blackberries. Would be pretty amazing with a splash of bourbon, I'd imagine. Gotta work this evening though so this is the non-party version.
